Meals for Tots: Vegetarian Nachos

Nachos are one of my favourite meals so I decided to come up with a healthier version. I now make my own baked beans with chickpeas, which is a lot better for you than the baked beans off the shelf. You can find my own recipe for baked beans here. 

Homemade Gucamole 
Avocado, diced tomato, red onion and a squeeze of lemon juice 

Simple Tomato and Basil Salsa
Chopped basil, diced tomato and red onion. 

Nachos 
A variety of different kumara sliced into 'chips', then baked in a little bit of olive oil and rosemary. Sprinkle cheese on top and grill. 

Serve with homemade beans and plain or Greek yoghurt
