Meals for Tots: Satay Stir Fry with Tofu

Tonight's tot meal included: 

A Satay stir fry with tofu 
brown rice
Homemade brushetta drizzled with olive oil, avocado, cherry tomatoes and parmesan

To make the satay stir fry you can either use a jar of already made satay sauce or create your own using Pics natural peanut butter for a healthier alternative. I used a mix of fresh vegetables e.g. broccoli, carrot, cherry tomatoes and canned pineapple pieces. I cook these in a frying pan with a little bit of olive oil, until tender. Once I've set these aside I cook a simple omelette with two eggs and some grated cheese. At the same time the tofu can be cooked in the same pan. Once cooked all  ingredients to the pan and simmer for a couple of minutes. Serve with brown rice.
