Meals for Tots: Kumara, Tofu, Red Onion and Parmesan Patties

These kumara, tofu, red onion and parmesan patties are really yummy. If you're worried that you'll be able to taste the tofu in them, you really can't. I use silken tofu, instead of regular tofu as it is a lot softer which makes it easier to mash. With the patties I also served scrambled egg and a small garden salad. Here's how to make the patties:

Kumara, Tofu, Red Onion and Parmesan Patties 

Ingredients

Four large kumara
1 red onion (diced)
Half a block of silken tofu 
Half a cup of parmesan 

Method

Boil and mash the kumara with a little bit of butter and milk. Set aside while lightly caramelising the diced red onion. Add all ingredients together and mix together well in a bowl. Use a tablespoon to scoop spoonfuls of mixture out of the bowl and mould into patties. Heat a large frying up and add two teaspoons of good quality olive oil. Could the patties for a couple of minutes on each side. Serve with Tzatziki. 


Tzatziki Recipe 

Ingredients

1 cup of natural, unsweetened yoghurt
Half a cucumber - finely grated
1-2 garlic cloves - finely grated
Several mint leaves - thinly sliced
A squeeze of lemon juice

Method

Once all ingredients are prepared mix them together in a small bowl. Put in the fridge for at least two hours prior to serving. This will keep okay in the fridge for a couple of days.
