Meals for Tots: Avocado, Baby Spinach and Tomato Omelette

Some nights call for a simple dinner. Rather than buying my little boy takeaways I try to throw something simple like this omelette together. 

Omelettes are easy to make, a good source of protein and you can add a variety of different things to them. Tonight I made an avocado, baby spinach and tomato omelette. I also added crumbled feta and grated colby cheese to it. 

It was served with custard and homemade stewed apple for dessert, with a simple kiwifruit and strawberry salad.
