Lunch for Tots: Coconut and Pineapple Pikelets

 I've been experimenting with a new pikelet recipe - coconut and pineapple pikelets. They're super yummy and I've popped a couple in my little boy's lunch box today. They'd be even better warm, with some coconut yoghurt and fresh fruit. Here's how to make the pikelets...

Coconut and Pineapple Pikelets 

1 cup self raising flour
1 egg
1 cup milk
1 cup crushed pineapple, drained
1/4 cup shredded coconut
Coconut yoghurt and fresh fruit - to serve with 
Chocolate chips - optional 


Mix all ingredients together in a bowl. 
In a heated and well greased frying pan add spoonfuls of mixture. 
Cook until bubbles appear. 
Flip the pikelets and continue to cook until golden brown. 
Serve with coconut yoghurt and fresh fruit. 

Here's what is in my little tot's lunch box today:
Multigrain crackers
Beetroot hummus and crumbled parmesan
Sliced orange, apple and grapes (cut in half)
Coconut and pineapple pikelets
Strawberry yoghurt and fresh passionfruit
