Raw Beetroot, Carrot and Mint Salad

This simple raw salad is packed full of colour, flavor and nutrients. It's the perfect salad for all your summer barbecues. Here's how to make it.


1 beetroot
2 carrots
fresh mint 
Pumpkin seeds
Pine nuts 
Chia seeds
Sunflower seeds 
Balsamic vinegar (optional) 


1. Peel and grate beetroot and carrots.
2. Chop fresh mint into thin slices. 
3. Add beetroot, carrot and mint to a medium sized salad bowl. 
4. Mix together. 
5. Mix in desired amount of chia seeds, pine nuts, pumpkin seeds and sunflower seeds. 
6. Lightly drizzle balsamic vinegar on top and mix. 

Other variations 

* Before adding seeds, I removed a small portion for my little boy's dinner. I then added some grated apple for a bit of extra sweetness and sprinkled chia seeds on top. 

* Adding some crumbled feta also makes for a yummy addition.
