Homemade Char Grilled Vegetable Burgers

Vegetarian meals don't have to be boring. Last night I made these delicious char grilled vegetable burgers and crispy homemade potato fries. 

Here's how you can make your own at home. 

Crispy Homemade Potato Fries

Four large potatoes 
Olive oil
Dried herbs of your choice
Himalayan salt 
Greek yoghurt (for dipping)

Preheat the oven to 200 C on bake. Cut potatoes into chunky chips. Place the chips on an oven tray covered with baking paper. Drizzle with olive oil. Add a sprinkle of herbs and Himalayan salt for extra flavour. Bake for 30 - 40 minutes, depending on the thickness of the chips. Once cooked add to your plate with a side of Greek yoghurt for dipping. 

Homemade Char Grilled Vegetable Burgers 

A mixture of green and yellow courgettes (sliced in long thin lengths)
eggplant (sliced in rounds)
red onion 
Capsicum (chopped into thick chunks) 
Parmesan (if you wish)
Burger bun
Olive oil 

While the potato chips are baking in the oven, char grill the courgettes, eggplant, red onion and capsicum. Once grilled set aside. Grill the burger bun in the oven until slightly crispy. Spread pumpkin hummus on one side; add rocket and a drizzle of olive oil to the base of the bun. Place char grilled vegetables on top of rocket. Add grated parmesan, if you wish. Put the top burger bun on and plate up.
