Homemade Baked Beans with Chickpeas

Homemade baked beans are full of flavor and cost effective to make. You can freeze them in smaller batches, making for an easy dinner when you need a quick and simple meal.


Ingredients

1 can of cannellini beans 
1 can chickpeas
1 1/2 Can of tomatoes (crushed and sieved) 
x2 140g containers of Leggo's tomato paste 
4 garlic cloves
1 red onion 
Fresh thyme
Fresh basil 
1/2 tsp paprika or smoked paprika
Olive oil for cooking
Himalayan salt


Start by dicing the onion, grating the garlic cloves and finely chopping the fresh herbs. 



Pour a small amount of olive oil into a hot pan. Saute until the onions are tender. Remove from the element and put aside for now.

Place beans and chickpeas into a colander. Rinse with cold water over the sink. 

 Add remaining ingredients to the pan. Mix to combine.

 Continue to cook over a low heat for 35 - 45 minutes.

Serve with crispy fresh bread or freeze for a quick, easy meal.
